Cozy Gingerbread Oatmeal

Gingerbread, gingerbread, ginger all the wayyy...Oh wait, that's not right, is it?

Do you wish that you could eat those inevitable, leftover gingerbread cookies for breakfast and call it a day? Yeah, me too, friend.

But are you also worried it won't keep you full until lunchtime? I thought so.

Then why not take a healthy and filling breakfast option like oatmeal and make it taste like that warm, spiced cookie you love so much?

That's where this delicious, cozy gingerbread oatmeal comes into play. 

Packed-full with fiber and protein, and boasting the anti-inflammatory properties of ginger,  it'll keep you full and make your belly happy. A balanced breakfast at it's finest — and happiness in a bowl — if you ask me.

Cozy Gingerbread Oatmeal


Oatmeal Ingredients:

  • 1/2 cup old fashioned oats
  • 1 cup oat milk (water or any milk works too)
  • 1 tbs maple syrup
  • 1.5 tsp molasses
  • 2 tbs almond butter (Feel free to sub w/any nut butter or leave out if nut-free)
  • 1 tsp vanilla extract
  • 1/2 tsp ginger
  • 1/4 tsp cinnamon
  • 1/4 - 1/2 tsp allspice
  • Pinch of salt (Leave out if using a salted nut butter)

Spiced Apple Topping Ingredients:

  • 1/2 apple, chopped
  • Pinch of cinnamon and ginger
  • 1 tsp coconut oil

Directions:

1. Heat milk/water on high in a small saucepan.

2. Bring to a boil, then add in oats, spices, syrup, molasses, 1 tablespoon of nut butter and vanilla.

3. Lower to medium-low. Cook for about 5-7 minutes or until thickened, mixing every so often to avoid sticking.

4. While the oats are cooking, chop the apples. Heat coconut oil in a small saucepan on medium-low, and mix in the apples and spices.

5.  Cook the apples for about 2-3 minutes, or until softened. 

6. Spoon oatmeal in a bowl or mug, and top with apples and a the other tablespoon of almond butter.
